Called Doodhi, Laukiand Ghiyain local language, Bottle Gourd is a staple vegetable across Indian homes. It has a white inner flesh and light green, smooth outer skin and grows in a vine. It belongs to the gourd family, and is harvested early (unripe) to be cooked into various dishes.
Bottle Gourd rates among the lowest calorie vegetables. It contains small quantities of folate and vitamin C, B-3, B-5 and B6.

Whole and uncut bottle gourd can be refrigerated after placing in a zip-lock. Cut pieces of bottle gourd can be stored in air-tight containers. Bottle gourd is a versatile vegetable, which can be made into a juice or cooked in a variety of ways.
